Taste of Heaven: Hot Spinach Artichoke Dip

Ever since I tried the artichoke dip at Freemans Restaurant, I have been on a desperate search to find a recipe similar to the famous side dish (Freemans recipe is top secret and word on the street is they ask their employees to sign confidentiality agreements so they don't spill the goods!). But I recently came across this equally tasty looking recipe on Food Wishes, which looks just as good as the restaurant original. And it has a video to make sure the cooking process goes as seamless as possible for the best finished product. Delish!
Ingredients:
2 tablespoons butter
1/2 cup chopped green onion, white and light green parts only
2 cloves garlic, very finely minced
1 package (10 ounce) frozen chopped spinach, thawed, drained, squeezed dry
1 can (14 ounce) artichoke hearts, drained, roughly chopped
8 ounces cream cheese
1/4 teaspoon hot sauce
very small pinch of nutmeg
salt and fresh ground black pepper to taste
1/2 cup grated gruyere cheese
1/2 cup grated Parmesan cheese, preferably Parmigiano Reggiano
1/4 cup mozzarella, shredded

Oooh sounds yummy..I wonder can I make it minus the cheese (I'm lactose intolerant..) Or I could just take Lactaid pills lol!

If you're not opposed to soy, there are plenty of soy cheese products that might do the trick! Or, just live in danger and enjoy it the original way!
