We finally got around to carving our pumpkins, which always makes me feel like a kid again. But I must admit, my favorite part about carving a pumpkin is using the leftovers, like roasting pumpkin seeds! We roasted ours in olive oil, salt + pepper, and I'm still snacking on them!
Do you guys have any good leftover pumpkin recipes? If so, I can always buy another one. ;)
