From Pumpkins to Pumpkin Seeds

We finally got around to carving our pumpkins, which always makes me feel like a kid again. But I must admit, my favorite part about carving a pumpkin is using the leftovers, like roasting pumpkin seeds! We roasted ours in olive oil, salt + pepper, and I'm still snacking on them!

Do you guys have any good leftover pumpkin recipes? If so, I can always buy another one. ;)

I'm probably going to sound like a total fool but I have never even thought of roasting the pumpkin seeds, I always just throw them away. Guess you do learn something new everyday!
